Crustless Quiche

Delicious and full of vitamins. Serves around 2-3 portions and it can be reheated the next day.


4 eggs

100 grams of cheese of any kind (I used feta, but can also be used parmesan, mozzarrela, cottage cheese, etc)

150 grams spinach

1 can mushrooms

1 tomato finely chopped


Saute the well drained mushrooms, spinach and diced tomatoes in a pan until the spinach has softened well.

In a bowl, whisk the eggs and add the shredded cheese. Add the spinach, tomato and mushrooms and stir. Add salt and pepper to taste.

Put the mixture in a heat resistant tray and place them in the preheated oven at 350°F (180°C) for 15-20 minutes, until the mixture is golden-light brown.
