This recipe is very fast and requires few ingredients.
INGREDIENTS (2 servings)
1 chicken breast(about 400 grams)
200 g of mozzarella
1 red bell pepper
(Basil – a few leaves – optional)
HOW TO PREPARE IT
Cut the red bell peppers into strips and bake in a pan with a little oil until soft.
Butterfly chicken breasts by slicing into the long side of the breast, but do not reach the other side completely. This way you will form a pocket where you will later introduce the ingredients.
Place the chicken in a pan on medium-low heat (or the lighter version – the grill). When it becomes white on both sides, remove it from pan and insert the sliced mozzarella, peppers (,basil) into the previously formed pocket and season the chicken breast.
Put it back into the pan until evenly browned on both sides.
